Kamoshi Harmony Life began with a simple frustration: modern seasonings rushed what should take weeks, and "healthy dessert" usually meant flavorless. We spent two years relearning traditional koji culturing from artisans in Japan, then applied that same unhurried philosophy to raw, plant-based cakes. Every jar and every slice carries that patience.

What is koji, really?

Koji is a mold — Aspergillus oryzae — grown on steamed rice for around 48 hours. As it grows, it produces enzymes that break starches into sugars and proteins into amino acids, which is where umami comes from. It's the same culture behind miso, soy sauce, and sake, used in Japan for over a thousand years.
