Preparing traditional Japanese fermented foods at home

Kamoshi Harmony Life began with one little girl.

When my daughter was born in 2013, she developed severe eczema at just two months of age. Like many parents, I initially followed conventional treatments, including steroid creams. However, as her condition continued to worsen, I knew I had to look beyond simply treating the symptoms and search for the root cause.

That journey transformed not only my daughter's life — but my own.

Before this journey, I worked in Japan as a physiotherapist. My medical background gave me a strong understanding of the human body and a deep respect for evidence-based healthcare. As I searched for answers for my daughter, I found myself studying nutrition, gut health, and the remarkable benefits of traditional Japanese fermented foods.

Through years of learning, research, and preparing nourishing meals with ingredients such as miso, natto and rice koji, I witnessed an incredible transformation in my daughter's health. Seeing her healthy, energetic and thriving inspired those around me. Friends and family began asking me to teach them how to make miso, natto and other traditional fermented foods.

That was the beginning of Kamoshi Harmony Life.

Believing that if I was going to teach others, I had a responsibility to deepen my knowledge, I travelled to Japan to study with Kojiya AMEKAZE, one of Japan's oldest and most respected koji makers, with more than 330 years of history. There, I learned directly about the traditional craftsmanship and the science behind koji fermentation — its enzymes, the unique compounds created by Aspergillus oryzae, and the extraordinary role fermentation has played in Japanese food culture for centuries.

When I returned to Australia, I realised how difficult it was to find authentic Japanese fermented seasonings made using traditional methods. Many commercially available products are produced in a short period of time and are heat-treated or otherwise processed to stop fermentation and improve shelf stability. While this makes them easier to distribute and store, it can also reduce many of the naturally occurring enzymes and other beneficial qualities created through traditional fermentation.

I wanted something different for my own family.

I wanted foods that were allowed to ferment naturally, preserving the richness, flavour and goodness that fermentation creates. Rather than compromise, I began making them myself — not only for my family, but eventually for others who were searching for the same authenticity and quality.

Today, every jar we produce, every workshop we teach, and every recipe we share reflects that mission.

We believe food is more than nourishment. It brings families together, supports the gut, nurtures the mind, and creates harmony in everyday life. We believe that preserving the wisdom of traditional Japanese fermentation can help people live healthier, happier lives.

Our name, Kamoshi, comes from the Japanese word 醸し (kamoshi) — "to ferment" or "to brew with time and care." To us, it represents patience, harmony, and the quiet transformation that happens when nature is given the time it needs.

Kamoshi Harmony Life began with my daughter. Today, it exists for every family seeking health, harmony, and hope through the timeless wisdom of Japanese fermentation.

The Founder

Our founder of Kamoshi Harmony Life is a physiotherapist and a Japanese fermentation educator. Her passion for fermentation began with a deeply personal journey to support her daughter's health. Guided by both her medical background and years of study, she discovered the remarkable role of traditional Japanese fermented foods in everyday wellbeing.

Today, she shares that knowledge through naturally fermented products, workshops, and education, with a simple mission: to help families discover the timeless wisdom of Japanese fermentation and experience healthier, more harmonious lives through food.

    Drawing on her background as a physiotherapist, Aiko studies gut health and traditional Japanese fermented foods — and watches her daughter's health transform.

    A turning point

    Studying at Kojiya AMEKAZE, Japan

    Friends and family start asking to learn. Feeling a responsibility to go deeper, Aiko travels to Japan to study traditional koji craftsmanship with Kojiya AMEKAZE, a koji house with over 330 years of history.

    Back home in Australia, Aiko begins making naturally fermented seasonings the traditional way — for her own family first, and now for every family seeking the same authenticity.
